Established in the late 19th century, the Jean Pabiot family estate (named “Domaine des Fines Caillottes” to differentiate itself from the six other Pabiot in Pouilly-Fumé) is located in the village of Les Loges. Currently, the estate is run by Alain Pabiot and his son Jérôme, the 4th and 5th generations, respectively. The property is comprised of 29 hectares of prime sites in the Pouilly-Fumé region. The vineyards — spread over five communes and broken up into 30 parcels — have varying terroirs which combine to give the wine incredible nuance and complexity. The main soil types are limestone covered with small white pebbles; marl with fossilized oysters; and flint: all with clay-limestone subsoil. The vines average 20 years of age, with the oldest over 40 years old. Farming practices are sustainable with the estate having Terra Vitis and HVE (Level 3) certifications.
