This junmai daiginjo-shu uses 100% Yukimegami rice from Yamagata Prefecture.
It is an elegant Japanese sake with a fragrant aroma and mild flavour.
Rokkasen believes that the sake brewing process begins with rice, the main ingredient for sake production. Approximately 98% of the rice they use is grown in Yamagata Prefecture. The main rice produced in the prefecture includes Dewa San, Miyamanishiki, Dewa no Sato, Yukimegami, and others such as Haenuki and Tsuyahime. This allows them to brew sake that is truly representative of Yamagata's climate.
The phrase "Wakozo Ryoshu" means "good sake brews harmony.” Rokkasen takes this one step further, and believes good sake also creates harmony with microorganisms. Sake is created with microorganisms, and humans must understand how to create the right environment for them to thrive. The care and attention paid to the microorganisms is fundamental to Rokkasen’s products. The brewery does not only focus on quantitative values such as time and temperature, but also on the five senses. Modern equipment is only one of its tools. It continues to focus on quality, keeping in mind that sake cannot be brewed without human sensitivity.
