Plantain eau-de-vie produced in Agua Temazcal, Cuicatlán, in the Sierra Norte of Oaxaca
Maestro destilador Rommel Krassel
Made from 100% platano piaaka (Creole plantain) sourced near the distillery
Fermented in closed stainless steel for 10–12 days using Champagne yeast
Distilled twice in copper alembic pot stills
Rested in glass 1 year before bottling

Wildly unique and surprisingly crushable, this platano eau-de-vie is made from small overripe plantains which grow abundantly around the Krassel family distillery in Oaxaca’s Sierra Norte. Selected for their high brix at harvest, the plantains yield a subtly aromatic spirit, which contrasts like a seesaw with the palate’s rich texture, generous flavor profile, and decadently candied finish. A delightful surprise and a sleeper hit for sure.
