Domaine du Castel Description
This has a beautiful, dark ruby color and is medium-bodied with notes of wild berry, spices, herbs and sweet cedar. Pairs well with medium flavored veal or chicken dishes.
Growth process : After fermentation, the wines age in the barrels, still separated by types and plots. After approximately 10 months, they are rated and made into the final blend. Then, the blend will continue to grow in the barrels for 2 more months. Finally, it will be transferred to concrete tanks for the last growing stage, for several more months.
Blend : Merlot, Cabernet Sauvignon and Petit Verdot

Deep nose of ripe blackcurrants and savory with just a hint of blackberry leaf. For a second wine this has a stunningly fine structure. Beautiful balance of fresh black fruits and fine tannins with savory and mint notes adding complexity at the long, elegant finish. Matured for 12 months in mostly used small oak barrels. Bottled unfiltered and unfined. Drink or hold.
