Vitovska is a native Slovenian grape present throughout Friuli-Venezia Giulia and, more precisely, in the Karst area and on the Slovenian side. An ancient and forgotten vine, it was rediscovered and started making pure wine a few years ago, since previously it was mainly used in blending with other grapes, giving increasingly particular and interesting results from a qualitative point of view. Straw yellow, it reveals fragrant notes of fig and cedar, white flowers, chalk and green tea on a brackish background. The taste is typically dry, vaguely almondy and with fruity acidity, it is savory and moderately warm. Closes on citrus notes. Suitable to accompany any fish-based first course or filled pasta, with fried fish, delicate white meat second courses or vegetable and cheese omelettes.
