Doma is a blend of Welschriesling, Grüner Veltliner, Red Sylvaner and Red Traminer with a total maceration time of 14 days before gentle pressing. Aging takes place for one year in 500-liter acacia and oak barrels, followed by a further 2 years of bottle aging until Doma has reached its full potential. In recent years, Doma has become increasingly elegant and structured. After some time in the glass, it develops more and more in the direction of Earl Grey and chamomile, crisp stuff, totally lively and unique. Definitely a very universal food companion. Like all natural wines from Naboso, Doma 2021 is bottled unfiltered and with minimal added sulphur.
