Quinta Do Javali Description
The "cerejeira" vineyard is the highest-altitude plot of land in our "Clos Fonte do Santo". The vines here are around 90 years old and the vineyard is located in the village of Ervedosa do Douro. Like all of our vineyards, it is cultivated following biodynamic practices. In accordance with the traditional methods of the Douro Valley, this vineyard presents a mixture of exclusive indigenous Portuguese grape varieties. The steep location of the vineyard, with its schist soil composition, varies between 600 and 750 meters in altitude and is oriented northeast.
Test results: Light ruby red color, like the color of red cherry. Exuberant and appealing nose. The aromas of red fruits dominate with a balanced ripeness, without being exaggerated. Evident notes of red cherry, currant and raspberry. In the mouth, the acidic freshness of a Douro red wine is admirable, which positively reflects the influence of the location of these vineyards in cooler terrain. The fruity notes, which combine with vibrant minerality, provide a tasting marked by lightness.
Varieties Mixture of 33 indigenous grape varieties planted together.
Winemaking and aging: The grapes for this wine are harvested manually and placed in 20 kg boxes. The wine is then subjected to spontaneous fermentation in stainless steel tanks, with around 50% fermentation with whole bunches. After gentle pressing, the wine is aged in used 500 liter French oak barrels. Unlike other wines, this wine is not cold stabilized and only undergoes minimal filtration.
