Sclavos Description
This wine comes from grapes of contracted winegrowers of the local Mavrodafni variety of Kefallinia that are cultivated in a traditional way in the Mavrodafni zone on the Paliki peninsula at an altitude of 50 - 150 meters. Also in this zone there are significant differences in soil types from clay-limestone to limestone soils with hilly and semi-mountainous cup-shaped vineyards and the age of the vineyards is over forty years. Uncultivated lands and olive groves are interspersed between the vineyards. The soils are clay-limestone. Their cultivation is conventional. The harvest takes place in the first fortnight of September. The vinification process is biodynamic and includes long extraction, completion of alcoholic as well as malolactic fermentation with native yeasts. Aging takes place in French oak barrels of the Allier type with a capacity of five hundred, three hundred liters and barrique type for twelve months. Bottling does not include any other processing. The produced wine has excellent density and coloring ability as well as delicious tannins. The character is rosy, vinous, with a long aftertaste that reveals aromas of ripe forest fruits and vanilla influences.
