Tarasi Description
Organically-farmed Otskhanuri Safere. The grapes are hand-harvested, fermented with indigenous yeasts and aged in the traditional kvevri (large amphorae.) The wine is bottled unfined and unfiltered, and no sulfites are used at any stage of the winemaking process.
Indigenous to the Imereti region in central Georgia, this grape varietal is found nowhere else in the world and in 2004 there were only 5 hectares planted in Georgia. Otskhanuri Safere is characterized by both high tannins and high acidity, peppery earthy aromas with plum, cherry, raspberry, and sloe berry for fruit flavors. The earthy pepperiness also carries over to the palate giving the impression of a high tannin high acid syrah- or mourvedre-based wine. Otskhanuri Safere wines are considered to some of Georgias most age-able, peaking somewhere between 10-15 years and capable of lasting 30 years. Decant this several hours before drinking, or double decant it the night before. Try this with rich stews and braises.
