The 2020 Bourgogne Aligoté Blanc "Nerthus - Côtes De Nantoux" from Domaine Pascal Roblet-Monnot embodies the very essence of its terroir. Made from vines about 35 years old located on the slopes of the Côte de Nantoux, this wine reflects the richness of the limestone soil impregnated with calcium. Harvested by hand in the early morning, the grapes undergo a slight crushing before a delicate three-hour pressing. The grapes are then decanted for 24 hours before resting in French oak barrels, where they will ferment and complete their malolactic fermentation, exclusively with indigenous yeasts and without the addition of sulphites. After a year of barrel ageing, the wine is transferred to stainless steel tanks with a slight addition of sulphur in a carbonic atmosphere, and then aged for another nine months. Two months before bottling, the sulphite content is meticulously adjusted to ensure stability and preservation of the aromas.
The result is a wine of great finesse, subtly balancing the characteristic fruity and mineral notes of Aligoté, with an elegant structure and a lingering freshness on the palate.
